ÿ Ingredients
rnrnChoice of suggested cuts:
rnrn500 g (1 lb) boneless sirloin grain-fed veal, cut into strips
rn675 g (1 1/2 lb) sirloin grain-fed veal with bone, cut into strips
rnrnrn30 ml (2 tablespoons) soya sauce
rn5 ml (1 teaspoon)tsugar
rn10 ml (2 teaspoons) cornstarch
rn225 g (8 oz) Chinese noodles (Yet-ca-Mein)
rn45 ml (3 tablespoons) peanut oil
rn1 sweet pepper (red or yellow), cut into strips
rn1 leek, finely sliced
rn120 g (4 oz) snow peas
rn4 celery stalks, cut into strips
rn10 ml (2 teaspoons) fresh ginger, finely chopped
rn1 g (1 pinch) cayenne pepper

rnrnPreparation
rnCook Chinese noodles in boiling water for 5 minutes.
rnDrain and set aside.
rnCombine soya sauce, sugar and cornstarch in a bowl.
rnAdd veal strips and mix well.
rnHeat 15 ml (1 tablespoon) peanut oil in a wok (or large skillet) over high heat; saut‚e vegetables (pepper, leek, celery, snow peas) 3 ? 5 minutes, stirring frequently.
rnRemove from skillet and place on plate.
rnAdd remaining oil and ginger and saut‚e the veal strips 2 to 3 minutes over very high heat, stirring frequently.
rnSeason with cayenne pepper.
rnMix in vegetables and add noodles.
rnMaintain high heat and stir entire mixture 2 minutes.
rnServe immediately.
