Ingredients
500g (1 lb) cubes of grain-fed stewing veal
15ml (1 tbsp) butter
1 large onion, diced
2 celery stalks, finely diced
2 carrots, sliced into rounds
1 parsnip, finely diced
1 clove of garlic, crushed
10ml (2 tsp) flour
500ml (2 cups) pale beer
Salt, pepper and thyme to taste
Preparation
In a casserole, melt the butter and lightly brown the grain-fed veal cubes
Add the vegetables and cook 5 minutes over medium heat while stirring. Powder with the flour and stir well.
Add the beer and season.
Cook over low heat, partially covered, for about 1 hour.
