Ingredients
4 grain-fed veal chops, 2,5 cm (1 inch) thick
Marinade
45 ml (3 tbsp) fresh lime juice
30 ml (2 tbsp) honey
10 ml (2 tsp) freshly grated ginger
2 ml (1/2 tsp) grated lime zest
Preparation
In a small bowl, mix the lime juice, honey, ginger and lime zest. Reserve the marinade.
Place the chops in a shallow plate just large enough to accommodate them, and brush them with the marinade on both sides.
Cover the plate and refrigerate for about 30 minutes: long enough to heat the barbecue.
Remove the meat from the plate and brush again, if there is any marinade left.
Place them on the grill at medium heat and cook for 12 to 14 minutes, turning once.
