Ingredients
4 grain-fed veal rib chops, 200 g (7 oz) each
60 g (2 oz) ground almonds5 ml (1 tsp) paprika
pinch of salt
pinch of pepper
peanut oil as needed

Horseradish sauce
30 ml (1 tbsp) horseradish
180 ml (3/4 cup) plain yoghurt (2% m.f.)
15 ml (1 tbsp) lemon juice
pinch of white pepper

Preparation
Roll the chops in the ground almonds, season with paprika, salt and pepper.
Fry the meat in a non-stick frying pan.
Sear the chops for 30 seconds on each side over medium heat.
Continue cooking on each side for 5 minutes over low heat.
Coat in horseradish sauce.

Sauce
Mix all the ingredients several hours in advance for a flavourful sauce.
